Today my wonderful granny and I baked some really tasty elderflower cupcakes. They are like butterfly cakes but with elderflower flavoured icing!
I thought since I am so nice that I would share with you the recipe
Elderflower cupcakes
Cream together 100g Softened Butter and 100 grams Golden Caster Sugar until pale.
Gradually whisk in 100 grams of Self Raising Flour.
Place 12 (We maneged to make 16) cupcake cases in a patty tin and spoon the mixure into each (BE CAREFUL!)
Bake at 190 'C for15-20 minutes until golden.
Cool on a wire rack before cuttingn out the center of each cake.
Halve each circle of sponge and set to one side.
Beat 100 grams sifted icing sugar, 50 grams softened butter and two teaspoons of elderflower cordial.
Spoon into the cakes and top with two semi circles of sponge,.
Dust with icing sugar and serve.
YUM!
